Method
- Preheat the oven to 180°C (350°F). Lightly butter and flour a cake pan to prevent sticking.
- Peel the apples, remove the cores and seeds, and slice them into thin, even slices.
- In a large mixing bowl, whisk the eggs, sugar and vanilla sugar together until the mixture becomes light and slightly foamy.
- Add the plain yogurt to the mixture and whisk until smooth and well combined.
- Gradually add the flour while mixing to obtain a smooth batter without lumps.
- Add the apple slices to the batter and gently mix with a spatula so the fruit is evenly coated.
- Pour the mixture into the prepared pan and smooth the surface with a spatula.
- Bake for 35 to 40 minutes until the surface is lightly golden and the center is set but still slightly soft.
- Remove from the oven and allow the flan to cool for about 20 minutes before unmolding. Let it cool completely before serving.
Notes
For extra flavor, you can add a pinch of cinnamon, nutmeg or lemon zest to the batter. This dessert can be served warm for a softer texture or chilled for a firmer consistency. It keeps well in the refrigerator for up to 3 days in an airtight container.
